Easy One Bowl Muffins with Healthier Ingredients

Happy Fall, y’all!

Here in Florida the heat index was in the 90s today, but that didn’t stop us from doing some Fall baking! Though, admittedly, we bake these muffins year round because they’re just that good and easy to whip up!

These muffins have been a favorite in our house for years. My kids gobble them up and even my husband, who is not really big into baked goods, loves them!

All the ingredients are mixed up in one bowl, so they come together quickly and easily! They’re light, cinnamon-y (we can agree that that’s a word, right?) and just the right amount of sweet. They’re made with simple, healthier ingredients that you likely already have on hand, so give them a try and let me know what you think!

Favorite Applesauce Muffins

Simple, healthier ingredients mixed up in one bowl

Cook Time 20 mins
Servings 12 Muffins

Ingredients
  

  • 2 cups flour (I use white whole wheat)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/3 cup unsweetened applesauce
  • 1/2 cup pure maple syrup
  • 1/2 cup oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 375
  • Prepare muffin tin with liners or cooking spray
  • In a large bowl, add flour, baking powder, cinnamon, and salt and mix until combined
  • Add applesauce, maple syrup, oil, and vanilla and mix again
  • Spoon batter into prepared muffin tin
  • Bake for 20 minutes
  • Allow to cool completely, then enjoy!

Notes

These make great mini muffins for a quick snack as well! Adjust baking time to 12 minutes for 24 mini muffins
